Not sure if the beneverywhere has answered your question of not, but once you have a plain txt file saved on your computer somewhere. Assuming you've already connected your ipod to your computer, your ipod is now a portable hard drive. Simply copy that .txt file over to your ipod drive in the NOTES folder. Voila!
