I wasn't sure were to put this but I wanted to know if I purchase travel insurance and then for what ever reason the dates I'm going on change can I change the days I'm traveling on my travel insurance?? If not what do I do??

I'd talk to the agent.
Generally you buy travel insurance at the time you buy the airfare, or within a limited number of hours (usually 0-72, but you have to ask your agent).
If you change your travel dates, you'll most likely have a huge penalty on your airfare, particularly if it's heavily discounted in the first place.
So basically just talk to your agent about what would happen if you want to change your travel dates after buying the airfare, but I would really try to avoid that, because there would be significant cost consequences.
Edit: I just thought of a possible exception. If you have a premium credit card which provides travel insurance, then it's likely that changing the dates won't matter, but you'd have to check with your card provider.
