Hi there, I'm leaving for Eurpe in March and hopfully will have around $5-6000 by the time I leave. Worst case scenario I was wondering how possible it is to pick up work in Europe, just temporary stuff at hostels, etc. I'm looking to spend 6 months to 1 year there and want to know if that is possible. thanks.

It's pretty difficult to pick up short term work like that, especially if you're not an EU citizen. As well as this, it may be against the terms of your visa, meaning that it could result in you being deported or worse.
Basically, don't come over to Europe unless you have enough funds for your entire trip (this is actually a condition of UK immigration, and I'd imagine most other countries follow the same thing). If you come over hoping to find work (especially if you don't have the correct paperwork) then you'll probably find yourself running home fairly early due to a lack of funds.
Also, is $5-6000 in US, Canadian, Australian etc (it makes a small but significant difference)? Even if it was US (best case scenario) then it would only be around £3500 (at most)- that's nowhere near enough for a year and barely enough for around 6 months, especially in Western Europe.
In other words, it's not possible.

If you'll search around a bit on this site you will find this subject has been covered several times in some detail. The consensus, especially from members who live in Europe and those who have thought previously to try what you are thinking about doing is simply this:
DON'T!
Contrary to what is popularly floating about, work such as you've described is nearly impossible to find, plus should you get caught doing so without the proper visa you will promptly be deported. Plan your trip for as long as your availabe funds will carry you, be that 2 weeks or 4 months.
