It's like anywhere, it can happen.
Basically as long as you use common sense, I wouldn't worry about it. Avoid travelling at night, stay away from unlit areas or anything you get a bad feeling about, stick with groups from the hostel that are going out at night.
Those are 2 of the 3 big months that people travel so there will be lots of travellers around, especially in the big cities.
My one tip is something we always did which is if we were unsure about an area or place, tried not to advertise that we were a tourist or only spoke English. Basically, if we were uncertain, we didn't talk all that much around locals. It sounds weird I know, but it's always good to try and blend in.

Hey Kim, sorry to steal the topic but your reply brought up a Q of mine. I'm interested in getting some night pictures and even just exploring some of the places I visit during the night (some at 11 or 12 and some until 4am I know some big places like Berlin and such will be unsafe at night. But what about the smaller towns in Germany, Belgium, Czech etc (such as Bruges) Are they safe to wander at night or should I avoid this entirely? Thanks

Honestly, I don't really think there will be much to see that time of night.
As far as safety, I don't think it's a good idea to be wandering that late at night just to wander. You are kind of asking for it. You never know what weird area or whatever you will stumble into.
Plus, you want to find out if your hostels will let you in if you come back at say 4am, some lock the doors after certain times so that people don't have access to come and go.

Yup most places I want to stay don't have the curfew. I didn't mean totally wander. More like check out some bars and such and get a few photos and some nice places at night. But thanks for the advice. I've only ever lived in fairly big cities and wasn't sure what it was like over in Europe for the more medium sized towns. Guess it should have been obvious anyway

Oh yeah, bars and stuff are cool - but don't go wandering at weird hours or I would have to worry! ;D
Plus, I also have a female perspective which is totally different from a guys.
About the curfew thing - double check every time with each hostel as while some don't have a curfew, a lot require you to have a code or something to get back in. Some have locked gates that you put the code into etc. Often they forget to mention it so if you are going out late, be sure to ask.

I think small or big town, the're all a risk factor Some cities can be safe or not, some towns as well! I think precaution is the best way! Even in a small place, i'd be careful!
