I am curious what people do with their pack during a day in the city. For example, say I get into Vienna in the morning and am just going to spend the day there before I take a night train to Frankfurt. What do I do with my pack all day long? I don't want to carry it with me. Or, if I am staying in a hostel for multiple nights, can you leave your pack there when you are gone during the day and know that it will be safe?

For the first question, many cities have left-luggage storage for a fee at the train station. So find out in advance about that, and the opening/closing hours, and then just leave your luggage there for the day.
When you're in a hostel, you will typically leave your pack there during the day. If you research ahead of time, you can choose a hostel that has lockers if you are concerned, and then bring your own lock. But if you just have ordinary dirty clothes, the odds are it will be fine even out in the open.

You might want to check if the train station you are leaving from does have lockers. From what I have heard many train stations have removed them, in fear of terrorist attacks. Some hostels also allow you to leave your pack in a storage room before check-inn or after check-out. You would have to return to pick it up before you get on the train, but that's better then lugging your pack around all day.
As for leaving your pack in a hostel when staying there: like Willtravel says, if you don't have any valuables in it (which you should keep on your person at all time!) then it's allright. I never have experienced any problems with leaving my pack in a hostel. If you can store it in a locker, that's an extra bonus of course.

just how safe are the lockers at train stations and do you have to provide your own lock. I bought a combination lock to take with me..is this ok?

Most hostels have lockers and if not, if there is nothing but clothes and toiletries, chances are slim that anyone would take it.
If you are spending the day somewhere, try the train station lockers but make sure to take EVERYTHING of value out and keep it with you. I think Cat is right though, you might have a hard time finding lockers as many train stations have removed them.
Joe - every train station will be different as far as how it works. Usually you don't use your own lock, which of course if something to wonder about. Still bring the combination lock though as you will need it for lockers in hostels.

I keep a daypack with me wherever I go. Water, camera, guidebook, passport, itinerary, etc. are always in that. My credit cards, DL, large bills, etc are in my waist belt. So, like stated above, the only things in the backpack are clothes. The hostel you check into in each city will let you store your packs until checkin time. I usually do my traveling in the mornings, arriving before checkin times. So I leave my locked pack at the hostel. Reputable hostels take pride in their security, so I have no problem leaving the pack.
