I am 28 years old US citizen and have decided to try backpacking through Europe for awhile. Dont really have a designated time from figured I would play that by ear. Dont really have much that is keeping me in the states. Have done some reading on this and have figured that I would be able to save up about 5000.00 before I leave but not sure what it will look like to find odd jobs once I am there to help extend my trip. Does anyone have any suggestions? Thanks

as Americans, we can't work in UK w/o a work permit, i think. that's not easy to get.
if you're willing to risk deportation, a fine & maybe even jail time, you can work "black." my brother did that for a while in Germany before his papers came through.
he did computer work for BMW, but you're more likely to get an under the table job at a hostel, bar or restaurant. or, do you have some specialized skill that might be in demand?

David's right, at least for the UK. It's incredibly hard for US citizens to get a work permit here unless you have parental heritage here (you'll need to prove this).
To be honest, travel within your means. With US$5k you should be able to do a month's trip or so - it would be better to do this than to run the very real risk of working illegally.
Also, you'll find it next to impossible to get a decent job here - you won't be elegible for the minimum wage, so you'll probably be on £3-4 an hour if you're lucky (waitering or manual labour). The vast majority of companies won't have anything to do with an illegal worker and to be honest, why should they? It's a lot easier to employ an EU worker.

it is a lot easier to find a cash in hand job in ireland than in the UK - in general irish are more open to that sort of thing. but don't expect to get paid a whole lot for work in the service industry. there is very high unemployment in some parts of ireland and like anywhere it's all about who you know

there is very high unemployment in some parts of ireland and like anywhere it's all about who you know yeah i just found this out a few years ago. they always told me "good in school = good job = $$$". then i see some idiots do some work without even being good in what they do and still getting paid a lot, just because of some relationship! dude they should tell you to make much friends instead of "today we dance our name" in the arts&music class :/
