Hey there,
I seem to recall there being a few posts on this topic. Try searching for some more detailed responses. However I'll put my 2 cents in. I don't know anything about Amsterdam, but I am currently in the UK on a working VISA. Here, if you don't have one it's quite tough to get a job. This is simply because there are tons of people from other countries here on working VISA's that employers have a lot to choose from without hiring someone illegally. The only sort of job I think you may get is something like handing out flyers etc.
I believe for Americans it is a bit harder to get a UK working Visa but not impossible. You are allowed to work for up to 6 months. I don't know details but you can search for a holiday working Visa and get the details. There are different organizations that organize people wanting to go on working Visa's (in Canada it's called SWAP -sorry don't know American one).
However.... if you happen to have any other passports or citizenship or anything it could be much easier to get a job. I just don't know your details.

Shmemily - US Citizens are inelegible for the WHV program (it's for Commonwealth nationals only). Instead, they have to go through other, more complicated routes to get a UK working visa. Don't think that the Netherlands have anything similar, although it's worth checking - it's unlikely to be available for US citizens though.
Otherwise check out the websites of the Dutch embassy in the US and the US embassy in Holland. Both will probably have useful information and will be able to give you a definitive answer to your query.

www.ind.nl/nl/Images/Verblijf_ENG_tcm5-595.pdfThis is a brochure (it's a PDF-file), that you can read if you want to come to Holland and you want to work. I just read it really quick, but for someone from the US, there are not a lot of problems, but it would be easier, if you can prove that you will have a job.
