Going to Europe soon and want to try to see some of the country side of it. I want to eat where locals eat(I am a journeyman cook) and see what life is like outside of the urban sprawl. I assume this brings about some logistical and sleep problems never mind language barriers. Any thoughts???

I don't know if this interests you, but there's a bunch of organizations that let you volunteer in exchange for food and accommodation. I think they are on farms and that sort of thing. I can dig up some more info if you are into that sort of thing.

Trains are very good, but it's possible the sort of thing you have in mind would be easier done by car, which is of course quite expensive. Another option might be to combine trains with bike use. You could take the train to a small town and then bike around the countryside. Depending on the country, there are some hostels in fairly rural areas where few tourists go.
Which countries do you have in mind?
I think the organization Kim is thinking of is WWOOF, which helps match up volunteers with organic farms.
