How large of a pack should I be buying? 2-3 week backpacking trip around Europe, and I'm 5'4'' 110 lbs. I want to make sure I don't get one too small- what does everyone recommend?

Pack size is somewhat a matter of personal preference, depending on how much kit you want to pack around (be sure to keep the "pack light" philosophy in mind!). My Pack is about 65 L, with the detachable Daypack. I find that to be a good size for travel. If if needed a Pack for mountaint trekking, where it would be necessary to include sleeping & cooking gear, I would probably need a larger pack.
You might visit some of the local shops in your area to have a look at the different models available. Whichever Pack you buy, make sure you are properly fitted for torso length and if possible try it out fully loaded for an hour or so.

something else to bear in mind is when you are going. winter requires bigger clothing (sweaters pants) whereas summer you only need t-shirts etc which take up less space. i usually take a 60l in the summer and fill it to about 50l i have a 42 l as well but knowing me and hwo i like to shop that one isn't a good idea

I went with a 65L pack (60L + 5L daypack that I never used). I'm quite a large person so my clothes would take up more room than a smaller person. As well, I went to northern Scotland in May so had some heavier stuff for the cold weather. I found it to be an ideal size.
A friend borrowed my pack this past summer to go to Scotland/England for 3 weeks. She's about your size and found it worked great. She was able to take all she needed in it and still had room for stuff she bought on the way.
