Travel as light as you can.
A complete first-aid kit would be too much, but some of the more usual thingd I always take with me. (plaster (pre-cut), some pills for an upset stomach/headache, and some cream to prevent muscular pains). I also bring flipflops, some hostels are cleaner than others, and I don't want to return from the shower, with dirty feet.
Hiking boots, I wouldn't bring, but I would make sure, that the shoes you would wear normaly have some profile on the soles.
Knives and Forks will be widely available in Europe, so I don't see a reason to bring them, but if you do, make sure not to put them in the cabinlugage. If you have good detailed maps, and you spend hours studying those maps (or am I the only one doing that), are good to take along.
If you are staying in dorms, don't forget the earplugs ...

I have a few thoughts to add to herrbert's suggestions:
- Hiking Boots: unless you're going to be doing lots of "heavy duty" hiking where the ankle support would be important, I wouldn't bother packing them along. I'm not sure how many locations you'll find that rent these?
- First Aid kit: as herrbert mentioned, a small "basic" kit is enough for most travel. I usually pack pain med's (Advil, Tylenol), Bandaids / Moleskin, PolySporin cream, hand cream and sun block. This is usually tailored to the trip somewhat, and I would expand this if necessary. Make sure your vaccinations are up to date before you go also.
- Flip-Flops: good idea! They're not heavy, don't take up much room, and are great for Hostel showers, etc. I forgot to pack mine along on the last trip, so had to buy a "replacement" pair in Italy.
- Knives & Forks: unless you will be camping and cooking, I wouldn't bother.
- Maps of the areas: definitely! I pack maps of each city along, as I find that makes it easy to find the Hostel / Hotel / B&B very quickly. They are also useful for finding my way around town when I'm touring. In many cases, the Hostels will provide a great city map for free.
Happy travels!!!
