Both are really worthwhile places to visit. If you have 4 whole days (or more) I suggest you do them both. It means that you can be back in Madrid in the evening, so you won't be missing too much. Madrid is not really a place with a lot of things to see, but a place with a lot of things to do. (apart from the 3 top art museums there: Prado, Reina Sofia and Thyssen)
I would choose Toledo over Segovia, because there is just a little bit more to see. It's a beautiful place, but it can also more visited than Segovia. Although I would choose, you have to know that there is one thing that Segovia has, that Toledo hasn't, and that is the stunning Roman Aquaduct. It also has masses of old churches, from the 11-14th century, a Cathedral, and a beautiful Alcazar (castle). In Toledo you will find a Alcazar, a Cathedral, but also a Synagogue (free entrance, and worth a visit), an old very small mezquita (mosq), and some beautiful streets to wander. (check the photosection for pictures of Toledo, I have send Jennifer pictures of Segovia, so they will appear shortly). If you don't feel like climbing to the old city, try to find the escalators !!!
Toledo also has easier access from Madrid, from Atocha Station (metrostop: Atocha-Renfe) it's just half an hour by train. Getting to Segovia by train takes much longer (2 hours) as it makes stops at every station between Madrid and Segovia. So if you want to go to Segovia, then choose to go by bus.
In short: if you have to choose: my choice would be Toledo, if you feel you can do both, than do both.

Both are worth seeing if you are in Madrid for any period of time. I personally liked Toledo better, but the aqueduct and the small shops in Segovia were great.
