I'm planning on traveling around Spain in February but haven't yet worked out the cities I want to go to. I've already been to Barcelona, Madrid, Granada and Sevilla, and I'm hoping to go a little more off the beaten path this time around. I know that I want to go to San Sebastian and I wouldn't mind going back to Barcelona or Granada, but I'm wondering if anyone has any suggestions of other places that I could explore. Anything would be greatly appreciated!

what about Arcos de la Frontera and los pueblos blancos?
Arcos is beautiful! the rest of andalucia ain't bad either - some of it is in your plan already. West of there is the Portugese algarve, another beautiful area. [Lagos is a favorite here]

If you have been to Madrid and you missed Toledo and Segovia, then see if you can get to those two places this time.
Other places I would recommend are indeed San Sebastian. Maybe a daytrip to Pamplona from there? You could also go the Basque Mountains (hills).
You could also go even further to the West, and settle for Santiago de Compostela. A big religious center, and destination for a lot of pilgrims.
You can also check out Salamanca and Avila. Salamanca is a popular university-city, with also a lot of exchange students from all over the world.
If you want to go to a region where not too many people go, then check out Extremadura. Towns like Cacéres (very beautiful old city), Trujillo and Merida are worth a visit, and close enough to each other to make it easy to get from one to an other.
Further South around Sevilla and Granada there are a lot of interesting places. Like David already suggested: Arcos de la Frontera is a nice place, The same is true for the coastal town of Cadiz (combine it with a trip to Jerez), Ronda (in the mountains between Sevilla and Granada.) and of course Granada. And like you say returning to Granada can’t be considered a punishment.
Another good area to visit is the southside of the Sierra Nevada: The Alpujarras. But February/March might be a little bit too early in the year to go there. On the other hand it should be possible to go skiing (the ski resort of the Sierra Nevada is reachable from Granada).
