I am having a hard time deciding how hot it will actually be when I am in Europe. I know I will be in Italy and thats a given for hot weather. However I will be starting in London and Paris in May and making my way through Berlin, Prague, Budapest etc. I will also be ending my trip in Stockholm, Dublin, and Edinburgh.
I think a blazer is a heavier item but might come in handy because excluding Italy the average temps dont seem to be more than 75ish at the most especially London, Stockholm, Dublin, Edinburgh and at night the temps will go down right? A blazer would also be a little nicer if I go out to a nice pub or whatever. What does everyone think?

The evenings are cooler in May in the places you've listed so some sort of light jacket (blazer, sweater, etc) would be a good idea. Just make sure it's not a hassle to carry as stuffing it into your backpack will crease it considerable - unless it's microfibre, then stuff away! The other alternative is a little creative layer dressing with what you have.

If you go to a pub you'd take your blazer off, no matter how cold it is outside. Especially in the colder cities you'll find that the pubs are nice and warm inside.
In my opinion if you want to look smart then a nice shirt and possibly a nice lightweight jacket/suit would be better, if you're planning on frequenting schwanky venues. If your budget can extend to do it, you might want to leave extra space in your bag and just buy something nice when you see it..
If you're considering staying warm then a more versatile jacket like a soft-shell would be more practical than a blazer They can still look smart for wandering between venues, pack well and are also water/wind proof. You'll find this type of wear completely acceptable in many venues - not many places have a dress code that demands a jacket, depends what you're going for I guess...
