Can you use a Eurail pass to travel from point to point within a city not just for trips from one city to another??

If the line is operated by a national rail company - you can use your rail pass. In most cases, urban transportation is owned by a city company and rail passes are not valid. Some examples: The RER in Paris is OK for rail passes, but the Metro is not. In Munchen the S-bahn is OK, the U-bahn is not. In Madrid you can use the Cercanias lines, not the Metro. In Copenhagen you can use the S-tog. However, it would make sense only if you have a consecutive-days pass (such as Eurail pass) or if you use it on the date you mark on your flexi pass.
