Is it best to buy tickets for tavel while in Europe and have to reach certain places by a certain time or can you buy cheap tickets at the airports??

It might depend on what time of year you are traveling. And how much idea you have of your itinerary. We waited until the week before to buy tickets for Athens-Crete and Athens-Rome, and that was in late June. We bought them while we were still in the first leg of our trip, in Venice.

With many of the budget carriers (or regular carriers for that matter), the walkup fares are shockingly expensive. You most often have to book ahead to get a good deal.
But it's hard to say how far in advance is necessary. Just be prepared that if you wait until near the time of the flight, you might have to pay a great deal more.

Agree with WT...most of them ned to be booked some time in advance. My 4.95 bought in advance flight from Dublin to London would have become 120. when I thought about shortening the trip and getting a ticket the same week I wanted to make the flight!

Yes, I am not sure we could get away with now what we got away with back in 2001. The June/July Greece flights were the same price that they had quoted me the previous February. But maybe that would not happen now. It also depends on what time of day you travel. If you are willing to take a redeye flight, maybe you could wait until the last minute to book and not pay too much. I guess it all comes down to how flexible you are. If you already know what you want to do and when you want to do it, buying ahead is the cheap way to go.
