originally when we made the trip reservation, 2 of us got one way tickets because we didn't know when we'd be coming back.
now looking at one way fares to Toronto from any point in Europe, the amounts are insane. Do you think it'd be cheaper to be on standby whenever we decide to come back (which will likely be in August) or look for last minute specials to Toronto while in Europe?

if you plan a trip of less than a year, you might could get a round trip ticket with an open return date.
i did that once, got an open return Lufthansa round trip, DFW - FRA, just came back when the weather turned cool (but, because of family issues, i couldn't start the trip until October 1).

we already purchased a one way Zoom Air flight into Europe back in December when it was only 179+tax

Be prepared for the possibility of intense questioning when you arrive. One way fares draw a bit of interest with immigration these days...plus, many countries require you to have proof that you are leaving. They seem to like to see that return ticket in your hand when you enter.

i dont think it should be a problem since i can present London Gatwick a whole bunch of printed out reservations and Eurail to say that I'm travelling around without a definite return date
