I'm moving to Spain around the beginning to mid August. I want to fly into London and go from there. How bad would it be to just get there with a couple of hostels in mind and just winging everything else?

I regularly 'wing' it, except for 'magor' cities like London, Rome, Paris, etc. And have rarely encountered any problems. That said, I travel in NOV-FEB time frame. It's a whole different world in August. I'd be very hesitant to try to wing it in summer/high season. Not to say you couldn't find anyplace to stay, but very likely that the low cost/budget spots will be fully booked and you will find yourself either paying way more than you want or sleeping 'on the streets'. May thru Sept...I'd say if you want the cheaper options, you're going to need to book in advance.
