Having a lot of difficulty finding travel info for this. Me and the gf are debating two travel plans, and will go with the cheaper.
Manchester -> Portugal -> Paris -> London ->Manchester or Manchester -> London -> Paris -> Portugal -> Manchester
London -> Paris we will take Eurostar for 50pounds one way. Manchester to Portugal looks around 60 Euros one way flight. Manchester to London looks around 20 pounds by rail.
So my only complication is now Paris -> portugal. Ive tried Ryanair but no flight goes to portugal from paris, and cant find rail info.
Any help would be greatly appreciated.

Ryanair is only one of many low-cost options. EasyJet has a flight from Paris Orly to Lisbon, which would likely be quite convenient. Check out other options at www.whichbudget.com .

Easyjet flies from Charles de Gaulle to Lisbon (and back), and another option is Aigle Azur, but it's a french company, and their site also is only in french. www.aigle-azur.fr/WillTravel is right Ryanair is only one of the airlines, and in my opinion the worst choice it you want to fly from Paris, as they are leaving from Beauvais, which is nowhere near Paris.

Lisbon isn't the only place in Portugal. if you'll be in northern Portugal, for example, Oporto might be a better place to take your flight. for London - Paris, you might be surprised to learn how cheap flights can be. the flights take a little longer, city center to city center, but are much cheaper. easyJet offers Luton to CDG flights from £6, plus tax. London -> Paris we will take Eurostar for 50pounds one way. Manchester to Portugal looks around 60 Euros one way flight. Manchester to London looks around 20 pounds by rail.

Ill take a look at the other airlines. Flying from London to Paris is not cheaper when factoring in flight tax and taxi fares to and from the airport, it adds up to near or even more, and its much easier taking eurostar as its from city to city no mess getting to and from airports.

EasyJet Lisbon to CDG are 251 Euros in mid Aug... thats way more than im looking for, its cheaper to fly back to manchester and train back! However the reverse, Paris to Portugal is 80 euros + tax, which is still expensive

If this is for August, you are looking pretty late for cheap fares. What dates are you looking for? There are several other airlines you can look at also from the whichbudget links. Plus, Seville is close to Portugal (but not necessarily going to be cheap either).
Also consider
Manchester - Portugal - Paris - London - Manchester
And look at flights from Liverpool to Portugal also, on whichbudget.com as well as from East Midlands.

(early flight to Madrid 55 euros), and an afternoon flight from Madrid to Paris for 40 euros). (I tried for the 22th of August btw) For august these are normal prices. If you want cheaper prices you should book at least 2-3 months before taking the flight.

Would it be cheaper/easier to do this: Flight Manchester/Liverpool -> portugal RETURN then do london/paris as a seperate trip? using eurostar return?
Plan on spending 1 week in portugal 5 days in london, and 2-3 days in Paris, rest of time in Manchester with relatives. So may be easier to do 5 days Manchester/7 days portugal/7 days manchester/5 days london, 2 days paris/rest in Manchester before my gf leaves

"Portugal" is rather non specific. if in the South, you could cross to Sevilla on a bus, a fly on Vueling to Paris - CDG.

Well i have a cousin in Faro, still waiting to find out if we can stay with the relative or not, if we can bonus and we will use faro as our base and day trip to lisbon and other parts. Otherwise we will hostel and it wont matter where as long as we can chill out and see the sights. If i cant find cheaper prices then I may have to cut Portugal this sucks! nearly 500 return, my parents went last year from Man-Port return for 200 CAD return each. This is well over double.

There are two factors that likely increase the cost over what it was last year: 1) the new environmental taxes in the UK which add at least 20 pounds to every UK-outbound ticket 2) the late date that you are looking for tickets for the most popular season of all.

I found 350 CAD return, which is more than I would have hoped to pay, but if I want to go to Portugal I guess its worth it.
Booking with jet2go or thomsonfly, both look alright.
