Hi there again!!
I'm trying to find a all- inclusive travel insurance
for 3 countries, but all I see is quotes for 1 destination
only. Do I have to buy 3 different insurances? or can I get one covering my 3 contry-trip?

I live in the UK, so any general recommendations will be unsuitable. However, you can buy insurance through this website - www.reservations.bookhostels.com/guideforeurope.com/insurancedetails.php . I've used it before and it's pretty cheap, especially for the level of cover offered.
