I am going to be in Western Europe this summer from Mid- June through the end of August. Will I need warm clothes such as thermals or anything like that? Also, how many days of clothing should I carry minimum?

Definately not thermals or anything like that, it will be warm, if not hot by then, so don't worry. Take something to wear on chilly nights though, like a light jacket.
As far as how many sets of clothes, take at least 7 pairs of underwear and socks-this allows you to only have to do laundry once a week. I would take a couple pairs of shorts, 3-5 shirts and at least one pair of pants. You can wear things more than once before washing it, usually.

Kim,
Thanks for that very informative post! So... underwear and socks. Is it worth it to buy expensive underwear and socks? My local outfitter (REI) has anti-bacterial underwear that is designed to wick moisture away and prevent bacterial growth blah blah blah but they are $18 a pair!! Is something like that worth it or is it ok to stick with my regular boxers?

No, stick to your regular stuff. You will be washing it in laundry places that would probably wreck it anyway, those dryers are hot!
Underwear is so light anyway, so I recommend taking at least 7 pairs. You can get by wearing a shirt a few times but lets face it, that doesn't work for underwear! ;D

It seems clothing and hygene habits vary... on hot days I change T-shirts as often as underwear, if not more... What I usually do is keep a clean shirt for the evening, when it's cool and I don't sweat much... and during the day I wear the same clothes for several days until they really stink (if you excuse me)... The deal is... more sets of clothes, less often laundry, or vice versa... With the exception of one set of "fancy" clothes, the rest are just everyday clothes, the only important factor is that I fill comfortable with them... buying special clothes for travel? Never thought of that...

Your questions are refreshing. Quick response, in the summer (when you are going) it will be hot. the north parts of Europe (UK and Scandinavia especially) might get cool at night and if it rains, but when I say cool, I mean wearing long pants and a windbreaker or sweater at the MOST.
Otherwise, it will be so hot that you will probably wear shorts and T-shirt most of the time. You might laugh now, but when you hop on that train in Italy and Greece and realize that it is 95 degrees outside and there is no air conditioning (same goes for the hostel) then you will realize that you do NOT need warm thermal undies!!

The only occasion in which you would need warm clothes in summer is if you go high up in the mountains. At altitude of 3000m it can really get cold anytime of year.
