Are these hostels generally packed in July?
- St. Briavels Castle in Gloucester - Stahleck Castle in Bacharach - the Gimmelwald hostel atop the mountain
If yes, then how far ahead would I need to reserve a bed? I don't want to reserve too far ahead, I could end up liking a place/getting lost somewhere before.

As far as I know, the hostel in Gimmelwald doesn't take reservations. And BTW, it's not on top of a mountain...

You would definately want to make advance reservations for the castles, they are popular with groups. As far as the Gimmelwald hostel...No, the hostel isn't on a mountain but apparently has breathtaking views all around of the mountains. To be precise, Gimmelwald is on sort of a ledge, high above the valley, overlooking the Jungfrau range at the opposite side of the valley, and at the foot of Schilthorn, another mountain-top attraction. It is accesible by cable-car from the valley station at Stechelberg, or by foot from Muerren, a bigger resort which is also car-free and accesible by funicular and mountain-railway. Arguably, it is the hostel with the best "room with a view" in Europe. Last time I checked, they only took reservations by phone a few days before arrival, as the costume there is that once you check in you can stay as long as you like, and they wouldn't kick out guests to make space for new people.
