Hey, I was looking around at hostels in Amsterdam and Switzerland just for fun to get an idea of prices when i realized most of them are booked a year or 2 inadvance! Is this really how it is? If thats the case it will be impossible for me to get a place to stay just winging it. - Ryan

As far as dorms go, no - it's very possible to wing it. Many groups book private rooms way in advance and often cheap doubles are booked a few months in advance but if you are staying in dorms, you should be OK.
That said, without reservations you may not get your first choice in hostels or get one of the cheaper ones, but you should usually get something.
Now, Amsterdam is booked constantly. Amsterdam and the hostel in the Cinque Terre are two that I highly suggest booking in advance for.
They probably aren't booked a year or two in advance-they probably just don't take reservations that far ahead of time. If you can book a few months ahead of time, you are good to go.
