Piccadilly is super-central in London - www.piccadillyhotel.netParis - not sure Amsterdam - StayOkay Vondelpark probably has the reputation of being the nicest. Flying Pig and Bulldog are more party places. Take a look at the Hostel Search at the bottom of the page here, and the reviews on the GuideforEurope.com site.

i stayed at le village in paris... nice, clean and social. its in montmartre so not especially central but right near 2 metros.

Sorry guys, I was asleep at the wheel here. Noticed that there were several 'replies' here from 'guests' attesting to 'I stayed at XYZ hostel and it rocked' and everyone loves it, you know the sort. No real information given or specifics. Checked the IP's this morning.....and to no one's surprise I am sure they were located right in the same city as the hostel they were remarking on. Nice try guys....but ads are ads, even if we are slow to see them! ging

I've stayed at the StayOkay Vondelpark. While it is devoid of any sort of character, it is still a decent place to stay. Swipe cards for security, bathrooms attached to each room (a big plus, sharing 3 showers and a few toilets to a floor or that sort of thing is not much fun) and the best thing of course, is that it is next to the charming Vondelpark and a few minutes walk to the bustling Leidseplein. You can take a tram from Centraal to the Leidseplein or save your cash and walk, which is what I did. Generally takes 15-25 minutes to walk from Centraal Station, depending on your walking pace Flying Pig, as said before is more of a party place. If that's your style (and it does have an awesome location), book ahead as EARLY AS POSSIBLE.

I can vouch for Piccadilly in London. Stayed there two years ago as part of a 8-city backpacking trip and London was by far the easiest and most centrally located. Two seconds from a tube stop and in 15 minutes you're anywhere in the city!

Where I recently stayed on my three month trip: London: St. Christopher's Village....nice, very clean, decent breakfast, nice staff, location a couple blocks from the London Bridge tube stop and close walking distance to the Globe. Has a bar attached, which is not bad, but the rooms were nice.
Paris: Young and Happy....had a lockout, which kinda sucked, but the location was on the Mufferard (sp?) street which was full of cheap places to eat, etc. It was only a 15min walk from the Latin Quarter. It was an okay hostel overall...but not sure if how good other cheap options are. It seemed like it was one of the cheapest hostels with the best locations.
Amsterdam: Bulldog.... In the Red Light District, but with super-high security. Had a good breakfast, but overall, i think it was overpriced. If you smoke pot, it had a coffee shop, but I would look outside the RLD if you don't.
Hope that advice helps you weed out places.
