I have only stayed at the Mitte Backpacker Hostel in Berlin out of all those you are staying at (though I have been to all those cities except London) and I can honestly say this was the best hostel I stayed in out of the 10 total weeks I was in Europe. First couple nights I was in a 4 person room, then the last night moved to the big one (35 person) and it was a non-stop party. Absolutely incredible time. If you are looking for a party, get the 35 person room!

asm305, Welcome! I have some comments on two of your Hostel choices.
> Cinque Terre - I had a look around the C.T. Hostel last fall (I was staying in Riomaggiore rather than Manarola). It looks like a clean and well run property, and it's in a great location (slightly up the hill from the main part of town). However, they do have a very strict lockout during the day (10:00-16:00?), which was a problem for me.
> Rome - Did you check Alessandro Palace as well? I stayed there last fall and thought it was great (I was in a four bed co-ed Dorm). They have "free" Pizza at nights, although one has to be "quick" as it goes very fast. There are some nice restaurants just around the corner, one of which provides a discount for Hostel guests. It also has a Bar which makes it a bit more "lively" at nights, however I believe guests from downtown are also welcome to visit the Bar.
> Florence & Paris - I used budget Hotels in both those cities. You appear to have lodgings all worked out, so you won't need suggestions.
Happy travels!!!
