You have a lot of time reserved for cities like Sofia, Bucharest, Istanbul and Budapest. Maybe that's a little bit too much time to stay in one place? If you like long stays in cities, that is fine, and you will see things other travellers won't see, but there are some interesting other cities in that area as well.
You could spend some days at the beaches of the Black Sea. Varna and Burgas are becoming hugely popular over the last couple of years (maybe a little bit too much).
Another thought for that area, would be to travel to the Croatian Coast, and see Dubrovnik (maybe a trip to Mostar in Croatia), and to travel north along the coast to Istria
As it is one of my favourite cities, I would add Vienna, for a couple of days, maybe staying in Bratislava for one or two nights before getting to Vienna.
I would also add Salzburg, and if it interests you, there is a small town near to Salzburg called Werfen, that has a beautiful castle you can visit, but also there are Ice Caves you can visit.
Also I would stay in either Edinburgh or Glasgow, they are really close to eachother, so you can see one of the two as a daytrip from the other. Also I would try to see a little bit more of Scotland. It is a perfect country (keep the Scots happy) to travel around in. There are a lot of tours, but I would at least try to see a little bit of the Isle of Skye.
