My target price range is under $1000. So far, I've seen round-trip/open-jaw deals for as low as $1100. The Zoom fare was $500 round-trip, but that still leaves me to pay for a ticket from KCI to JFK.

If you look at ITASoftware.com , the cheapest I see for your dates is EWR-CDG (Paris) for $859 on Air India, or $818 for jfk-LHR. You could likely do a London-Paris open-jaw. But double-check Air India, as many people strongly dislike it.
I also see JFK-CDG, AMS-EWR on Aer Lingus for about $989 total. This is not bad, if you are willing to adjust your itinerary for it.
Other possibilities in the $1000 range - on Icelandair, you can get open-jaws with FRA, AMS, CDG, MUC, and if you book directly and ask for it at the time of booking, you can also get a free stopover in Iceland.

For the flight to Rome you would need to go to a bigger airport. Pamplona only services national flights. You could buy a return tip from Barcelona to Pamplona (Iberia) and back again, and then a cheap ticket with Vueling to Rome.
