Everything that I have read has suggested a sleep sheet/sack to take with you for use in hostels because the hostels will charge you per day to rent one if you don't have one.
However, these are the same books and people who are recommending that I pack as light as possible, so I am confused.
The cheapest sleep sack I could find of decent quality is about $38. If I buy one and take it with me, then that leaves me without enough room to carry the rain-proof cover for my backpack that doubles as a dufflebag. I just don't think I have room for both. I wanted to use the dufflebag for souvenirs toward the end of the trip.
Is the sleep sack really worth the space and weight that it uses?

You don't need a sleepsheet, except for a very few hostels. In a few other places, you may get charged 2 Euros or so to "rent" the hostel's sheets for the course of your stay. So I'd take the dufflebag instead of the sleepsheet.

It's not worth bringing one. Just bring a pillow sham with you. That'd make you feel better knowing that you're sleeping on a familiar piece of linen instead of a pillow that might not have any shams on it.

Like WT already wrote, you most likely don't need to bring you own sheets, and most hostels are not very pleased when you bring in a sack.
I found that in Scandinavia it is pretty common to bring your own sheets, but if you don't you can always rent some.
