Hey d! Feels weird giving you suggestions on travel - but in a good way ;D
Osnabrück is a quaint little town not far north from Münster, and Bremen (yes, I'm biased, but you can see why if you visit) isn't much further up the train tracks either. Cuxhaven has a great horse race on the mud flats of the harbour called the Cuxhaven Wattrennen but I think it's in July (I haven't been for 20 years) - might be worth checking as it's a bit of muddy fun and something different. Bremerhaven is a neat little seaport with very Dutch-looking houses (indicative of this part of the world).
For the Netherlands, look at Groningen (might be a few connections away, but worth a visit) or even Amsterdam, but that would be more like an overnight trip, if you're up for it. Zwolle was quite cute when I visited many years ago too. You could also look at Delden and Markelo as though they are small they are close to the border and neat little Dutch towns.

i prolly should also mention that my 76 year old mother is now saying she wants to take day-trips with me. so, i'll need to take her interests as top priority. Aha! That might alter the amount of travel time worth doing in a day, comfort-wise.

I think you could visit the Airborne museum in Oosterbeek, near Arnhem. As you may know, in the Fall of '44, Operation Market Garden was carried out, in the area around Arnhem. The Airborne museum tells the story of that failed mission. Nearby is also one of the big war cementaries of the Netherlands.
