Most likely, it's worth it to not fly out of Girona.
However, I don't think Ryanair is a horror show, generally. There's no indication it's less reliable than other airlines. It is cramped, you may encounter a shoving scrum as you grab a seat, but it's otherwise no worse than other airlines, in my opinion.
Familiarize yourself with the EU guidelines for compensation if a European airline misbehaves. With any airline, including the most expensive, there are many stories of cancelled flights (although it's only a small number overall) and poor service, so I don't see any reason to think Ryanair is some kind of horror. With any flight, you should have a backup plan if the airline suddenly cancels the flight, and you should never rely on one unconnected airline to get you to the next airport in time for your flight.
