Hi Stompy,
sorry for not being able to respond to your previous request, which had the boat trip from Venice to Athens, but I started this week at my new job, so it's been kind of busy.
I think this looks really doable. I am not the Italy or Greece expert, but I have heard some mixed reviews about Seina, and from what I gathered from that is that one day is enough there. For Florence it differs, and it depends on your plans there. If you want to visit the 2 most important museums, you should make reservations, if you want to use your time efficiently. Remember that 2 nights in general means only 1 day. Coming from Seina, in the morning, means you only have 1,5 days for Florence, which for me seems too short.
Again the same for the islands. It depends on the ones you choose, how long it takes to get there. If you only have one day on the island, it's short (esp. if you realise you need 1 day to get there, and 1 day to go back)
I don't think you need to use Interlaken-Ost (mind the -Ost) as a stopping point. It depends on the time you will arrive, but as far as I know going from Interlaken to Gimmelwald doesn't take more than 1 hour. So I would prefer to go straight to Gimmelwald. But I know Eagle, will provide you with better details about this route
