Welcome to GFE, michael949.
It's good to see that you've booked an open-jaw flight for your trip as you are only travelling for around 2 weeks or so, so this will ensure there is no back-tracking is required.
If you're starting in AMS (for 2-3 days would be good), perhaps you can look at flying from there (check Transavia) to Berlin for 3 days, train to Prague for 3-4 days which will allow a day trip to Kutna Hora. From there you can take the train to Munich via a town called Plzen (or Pilsen) if you're really into beer. Munich for 3 full days will allow sightseeing as well as a day trip to the castles (if you're interested). From there you can take either the train to Venice, stay for 1-2 days, then continue to Rome for the final part of your trip, or if you're running out of time (I haven't added these days up properly) then fly from Munich direct to Rome and have 3-4 days there before you fly home.
Have a play with those cities and time frames and see what you can come up with for an itinerary. Once you've done that, you'll be able to book your accommodation in advance and stay within budget.

I went that direction based on your description of beer as I didn't have much else to go on for suggestions. But it will certainly be warmer if you do more of a southern Europe trip. Go with that if it was your first instinct, and know that you can fly to Rome from Madrid or Barcelona for your final destination.

It depends on the route your taking. Once you've sorted an itinerary/direction, we'll be able to advise best options for transport.

You are covering huge distances for this trip.
If you are not into Paris, I would suggest to fly to Spain. I don´t know if there are direct flights to San Sebastian, but my guess is that that would be a bit difficult.
As the Madam suggests already flying is in a lot of cases cheaper and faster. Also note that besides the pass, you also have costs for reservations, and the beds, if you want to travel in the night.
Which Islands are near Rome?

For Barcelona, you check the Kabul Hostel, and for Rome, I would go for the Alessandro, there are two.
On budgetairlines you can travel with cabin luggage up to 10 kg. (check the dimensions) So you have to pack light, to avoid extra charges. To book an extra suitcase, normaly would cost you around 30 euros.

If you don´t mind which of these places, either take a dice and roll them, or check if you can find cheap tickets, that makes it possible to combine these cities.
