warrigal,
First of all, welcome to the Boards!
I don't have a lot of information on the type of holiday you're planning. However, a few thoughts.....
You'll probably need an International Driver's Permit, which is used in conjunction with your home Driver's License. It's valid for one year, and a Passport-sized photo is required. You should be able to obtain one of these at your local AAA (or whatever the equivalent society is in Australia).
You will definitely need Visa's for the Ukraine and Russia, but I have no information on the requirements for Australian citizens in the other countries. The websites for the Consulates of each of the countries should have something?
I doubt that a rental car is going to be an option, as most rental firms in Western Europe WON'T allow their vehicles to be driven in eastern Europe. You may have to consider leasing a vehicle, and the leasing firm may offer some type of insurance or CDW.
Some countries require highway permits for all vehicles driven on their roads. This is certainly the case in Switzerland, but I don't know about the other countries.
You didn't indicate the time frame of your trip?
Driving wouldn't be my choice for visiting the countries you mentioned, as it not only will take longer to drive between locations, but is also more of a "hassle" in terms of insurance, parking, possibly traffic fines, etc. Hopefully someone here will have specific information for you.
Good luck!

the main thing to worry about is the traffic fines... once you have the specifics on that you can enjoy your road trip...
