I anticipate this trip to be a gastronomical/culinary delight with excursions into sightseeing, art, cycling in the countryside, photography, punctuated by one day at the French Open toward the end of the trip. While in Provence, I will stay in Arles or Avignon. I am also going to have to deal with gluten intolerance which was minor on my trip to Cinque Terre in 2008.

TBE, good to see you're off on another trip to Europe. Avignon is a pretty and small town, but I think you might enjoy staying in/near Arles more and visiting Avignon for a day (if you can coordinate that visit with market day then even better!). Your gluten intollerance will interfere with the enjoyment of bread and cheese (!), but I'm sure you'll find a way around it, plus at that time of year, it's all about the fresh vegetables so you'll likely be able to minimise the gluten occurences, although watch the flour in some sauces - many chefs prefer to reduce stock for sauces, however some still add flour for thickening.
Let us know where you decide to base yourself and if you need any other information.
